Apple-Pecan Crumble Cake

Cake Batter:

  • 2oz. butter (half a stick), softened or 4 tablespoons vegetable oil (or a mix of the two)
  • 3/4 cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 3 large apples (I prefer Fuji; something very crisp) OR 1 apple and 3/4 cup applesauce
  • juice of half a lime (or lemon)
  • pinch of salt and black pepper
  • 1/2 cup milk (2% or soy or almond)
  • 1/2 teaspoon kosher salt
  • 1/2 tablespoon baking powder
  • 1/2 teaspoon cinnamon
  • 1 cup flour (whole-wheat pastry flour)  OR gluten-free flour mixture:
    • 1/4 cup oat flour
    • 1/4 cup sorghum flour
    • 1/4 cup millet flour
    • 1/4 cup cornstarch
    • 1/2 teaspoon xanthan gum
  • 1/2 cup pecans, roughly chopped

Streusel Topping:

  • 1/2 cup flour (whole-wheat, or for GF, oat or sorghum or brown rice flour)
  • 1/2 cup brown sugar
  • 1/2 cup rolled oats
  • 2oz. butter (half a stick), softened
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon kosher salt
  • 1/2 cup pecans, roughly chopped

Directions

  1. Preheat oven to 350°F. Grease and flour an 8"x8" square pan, or 8" or 9" round cake pan.
  2. Peel, quarter, and core apples. Slice each quarter into thin (1/8") slices. Heat a saute pan over medium heat with 1 tablespoon butter (or oil). Add apples and a pinch of salt and black pepper. Add lime or lemon juice. Saute until apples release their moisture and it evaporates, and the apples soften. Set aside to cool.
  3. Take 1 cup of the cooked apples and mash or puree; you want about 3/4 cup of apple puree. (Or just use applesauce for this step, and saute only one apple.)
  4. Cream together remaining 3 tablespoons butter (or oil) and sugar until light and fluffy. Add egg, vanilla, and salt, and mix until smooth.
  5. Add apple puree/applesauce and milk. Slowly mix to combine.
  6. Add all remaining cake ingredients (flour(s), cinnamon, baking powder) and slowly mix just until smooth (do not overmix).
  7. Fold in 1/2 cup pecans and remaining sauteed apples.
  8. In a separate bowl, combine all streusel ingredients. Mash with a fork until incorporated and crumbly.
  9. Add half the cake batter to the pan. Sprinkle half of the streusel mixture evenly on top of the batter. Pour the rest of the cake batter on top of the streusel, and finally top with remaining streusel mixture.
  10. Bake for 40-50 minutes or until an inserted toothpick comes out clean.
