Gluten Free Chocolate Mug Cake

  • 2 Tablespoons brown rice flour
  • 2 Tablespoons corn starch
  • 14 teaspoon xanthan gum
  • 4 Tablespoons sugar
  • 2 Tablespoons dark chocolate cocoa
  • 12 of a beaten egg (about 2 Tablespoons)
  • 3 Tablespoons milk (or soy milk)
  • 3 Tablespoons vegetable oil
  • splash of vanilla
  • pinch of salt
  • handful of chocolate chips
Mix the dry ingredients in a large coffee mug. Add the wet and mix as thoroughly as possible. Add the chocolate chips and mix lightly so that they don’t sink all the way to the bottom. Cook in the microwave for 2-3 minutes. Allow to cool for about 5 minutes

Peanut Butter Variation

Make as above using the following ingredients:
  • 2 Tablespoons brown rice flour
  • 1 12 Tablespoons white rice flour
  • 2 Tablespoons corn starch
  • 14 teaspoon xanthan gum
  • 2 Tablespoons peanut butter
  • 2 Tablespoons sugar
  • 12 of a beaten egg (about 2 Tablespoons)
  • 3 Tablespoons milk (or soy milk)
  • 12 Tablespoons vegetable oil
  • splash of vanilla
  • pinch of salt
  • handful of chocolate chips
