Chipotle Black Beans

  • 1 (15oz) can black beans, rinsed and drained
  • 1 tablespoon olive oil
  • 1 tablespoon ancho chili powder
  • 12 tablespoon smoked paprika (or regular paprika)
  • 12 teaspoon chipotle chili powder
  • 12 teaspoon garlic powder
  • 12 teaspoon onion powder
  • 12 teaspoon epazote or oregano (optional)
  • 12 water or vegetable stock
  • 1 teaspoon (or up to 1 tablespoon) chipotle sauce (Búfalo Picante Salsa Chilpotle)
  • salt and pepper to taste
  1. In a small (1.5qt.) saucepan over medium heat, heat olive oil. Add all spice and cook until fragrant, 1-2 minutes.
  2. Add black beans and water or stock. Simmer, stirring occasionally, until beans are nicely coated and most of the liquid is gone, about 10 minutes.
  3. Season with chipotle sauce, salt, and pepper, as desired.
