Guacamole

  • 3 ripe avocados
  • 1 lime, juiced
  • 1-2 garlic cloves
  • 2-3 scallions
  • salt and pepper to taste
Slice avocados in half and remove pit; score flesh into ¼-inch cubes and scoop into a bowl. Toss with lime juice quickly to prevent browning.

For a chunky guacamole, mince garlic as finely as possible (or grate on a microplane or other fine grater), dice scallions into very small rings, and finely chop cilantro. Toss everything with avocado cubes and mash slightly until desired consistency is reached (leave some avocado chunks).

For a smooth guacamole, simply chop up garlic, scallions, and cilantro and place in a food processor with avocados and lime juice. Process until smooth.

Season to taste with salt, pepper, and more lime juice or cilantro if desired. Serve as a dip with tortilla chips, or as a topping on tacos, fajitas, or chili.
